Remodeling a grocery store is a difficult undertaking for several reasons. Most of the work has to occur at night and the stores need to remain open and functional. Additionally, protecting open foods such as fresh produce from concrete saw cutting dust requires extra care.
Most of the stores’ remodeling plans included moving around refrigerated case drains, relocating or modifying the floral department plumbing, and installing new combi-ovens and grease traps in the deli. Faust Company also installed combi-ovens and grease traps in a number of other locations as part of a separate initiative.
